Lawrence Acedo
Director of Food and Beverage

Originally from Fresno, CA, Lawrence Acedo has been a recognized and treasured staple of Park City’s hospitality community since 2000. He comes to The Sky Lodge from Bill White Enterprises where he was Director of Hospitality for well-known Park City restaurants Wahso, Grappa, Windy Ridge Café, Chimayo and Ghidotti’s. His varied responsibilities included restaurant management, opening new restaurant concepts, implementing a VIP program, and conducting wine and food seminars. Prior to Bill White Enterprises, Lawrence was Restaurant Manager for Bistro Toujours at The Chateaux in Deer Valley and spent five summer seasons in the Grand Canyon as Assistant Food & Beverage Manager for Xanterra Parks & Resorts.

Lawrence brings a wealth of food and wine knowledge, banquet experience, strong leadership and guest relations skills to his role as Restaurant Manager for The Sky Lodge, overseeing operations for Easy Street, Bar Boheme, Sky Blue and the hotel’s banquets.

 In addition to Lawrence’s enthusiasm for food and wine, he enjoys playing guitar, going to see live music, and fishing and hunting.

 

Ashley Chapman

A native of Luton, England, near London, Ashley Chapman got his start in the kitchen washing dishes at the age of 14 after school in a small hotel where he developed his drive to pursue a culinary career. Completing school just two years later, he began cooking full time in an intimate, 40 seat restaurant near Maidenhead, England.

 For his 18th birthday, Ashley dined at Gordon Ramsay’s Claridges restaurant seated at the chef’s table in the kitchen. Upon learning that Ashley was a cook, the head chef invited him to return the following week to spend a day in the kitchen at which time he was offered a job starting as a commis at the prestigious restaurant. Ashley ultimately became sous chef during his four years at Claridges. He then spent two months at Gordon Ramsay at The Savoy during the reopening.

 Departing London in late 2011for New York City, Ashley spent a month at Charlie Palmer’s Aureole, then went to Sydney, Australia to work at Matt Moran’s Aria and explore the city’s various cuisines and cooking styles. He remained in Australia for six months, traveling and interning in the kitchens of some of Sydney’s best restaurants.

 Ashley’s globetrotting landed him in Park City in February 2012, where he initially worked private catering events while seeking a unique career opportunity in which he could utilize his international experience and culinary talents. Ashley was hired by Sky to be the chef of Tavern, an artisan bar offering the area’s only gastro pub experience. His menu marries hearty, British-inspired classics with the latest American culinary trends.

 In his short time in Park City, Ashley has embraced the mountain resort lifestyle. He recently started skiing, enjoys downhill mountain biking and dines out frequently. Ashley embarks on one big trip per year to a food destination, eating his way around different cities.

 

 Kevin Dalebout
Executive Chef

Crediting his brother for exposing him to the restaurant industry where he initially got his foot in the door during his teen years as a dishwasher, Executive Chef Kevin Dalebout developed an intense desire to pursue a culinary career. Leaving his home in Orem, Utah to study the art of creating fine cuisine, Kevin graduated from Western Culinary Institute in Portland, OR earning a degree in culinary arts.

 Returning to Utah, Kevin spent five years honing his skills in the kitchen of Sundance Resort’s Tree Room, Utah Best of State winner for several years. He further developed his flair for contemporary mountain cuisine during his nine years at Deer Valley Resort’s prestigious Mariposa restaurant, Zagat Restaurant Guide’s top ranked Utah restaurant.

 As Executive Chef for The Sky Lodge, Kevin is responsible for creating new culinary concepts for the property’s extensive dining and bar facilities and in-room dining service. Kevin’s energetic personality and enthusiasm for fine dining renders him a perfect fit for managing The Sky Lodge’s dining program and back-of-house staff. In addition to executing his craft and thriving on the adrenaline rush of the kitchen, ensuring his employees are happy is a top priority, which he finds to be one of the most rewarding aspects of his career.

Being married to a Peruvian has afforded him unique opportunities to work in restaurants in Lima, including Cebicheria La Mar. Kevin is an outdoor enthusiast who enjoys skiing, biking and hiking.

 

Tina Belanger DeRose
Spa Manager

Tina’s small town Canadian heritage has brought her to the Wasatch in pursuit of a mountain lifestyle with a passion for the great outdoors and a desire to provide impeccable service within the spa, health and fitness industry.

Tina created and managed her first business as a full-service spa and salon nearly 21 years ago in Edmunston, New Brunswick, Canada.  She relocated to Utah in 2001 and for the past 13 years has continued to blossom as an enthusiastic business manager in the cosmetic and medical spa and retail industry.

Tina shares her enthusiasm for life with her husband and four pets encompassing two dogs and two cats.  When not pursuing her clients' or teammates' needs, or of course removing fur from the furniture, Tina can be found skiing, hiking, running or camping somewhere in the Wasatch Mountains.

 

Terry Mitchell Nani
Director of Sales

A Manhattan Beach, California native, Terry Mitchell Nani, a self-proclaimed ‘60s beach boy fits right in to Park City’s mountain casual culture. As The Sky Lodge’s Director of Sales, he contributes an astute analytical/organizational skill base, a creative sales approach, a keen wit, and an engaging enthusiasm for hospitality and entertaining.

 Educated with degrees (BA, BS) in organizational behavior, public relations and journalism, as well as advanced degrees in psychology (MA, MEd), Terry brings an array of experiences throughout his nearly 40 years of diverse opportunities in the airline, entertainment, not-for-profit and hospitality sectors with corporations such as Disney, Marriott and Hilton brands, Pan American World Airlines, United Airlines, as well as a couple of 501c3 directorships. Over that time, some of the hats he has worn include therapist, workshop/seminar presenter, corporate meeting designer/event planner, in-flight service manager, sales executive/manager, director of sales, commercial actor and spokesperson.

 Terry and his partner have eight children between them and 11 grandchildren. They live on an acre with their beloved horses and dogs. Extensive travel, outdoor recreation, dining out and cooking at home keep them busy and happy. Terry strives to be the person his two dogs think he is.

 

David Olson
Director of Rooms

Longtime Park City resident David Olson brings 22 years of restaurant and hotel experience to his position as Director of Rooms for The Sky Lodge. His early career was sparked by growing up in a military family constantly on the move, during which time he developed a passion for sampling different cultures and cuisines.

After studying business management at North Carolina State University, David attended the prestigious Culinary Institute of America in Hyde Park, NY.  He then honed his skills at some of the country’s top restaurants and hotels. His time spent at the Mansion on Turtle Creek in Dallas, Texas and the St. Regis, New York makes him a great fit for Park City’s premiere boutique hotel.  His former unique careers as a culinary instructor in France and as an underwater cameraman for National Geographic and ESPN took him around the planet, enabling him to enhance the worldly sophistication of The Sky Lodge culture.

 

 

Hilary Reiter
Director of Marketing & Public Relations

A New York City native, Hilary Reiter started her career in the music industry upon earning her BA from Barnard College, Columbia University. She moved to Park City in 2001 to work in the Sundance Film Festival Press Office and ski the Greatest Snow on Earth. For several years, she publicized Park City as a world-class destination, while employed by organizations such as the Park City Chamber & Visitors Bureau and Ski Utah.

Hilary brings her enthusiasm for Park City’s dynamic offerings and strong ties to the community to her role as The Sky Lodge’s Director of Marketing & Public Relations, overseeing the property’s local and national communications efforts.

An active member of the Park City community, Hilary managed Park City Mayor Dana Williams’ re-election campaign in 2009, has been involved with various local non-profits, and is a member of the Park City Women’s Business Network. Her favorite activities are skiing, hiking, snowshoeing, taking in shows at the Egyptian Theatre, outdoor summer concerts, and fine dining on Historic Main Street. She resides with her two adopted Lab mixes and cat in Park City’s Old Town, close to The Sky Lodge.

 

Melissa Renschler
Human Resource Manager

Melissa Renschler relocated to Park City with her husband and newborn daughter in 2012 from Vail, Colorado where was the HR Manager for Gorsuch, performing HR and operational management functions for nine luxury brand retail stores. Previously, she spent several years as Director of Human Resources at the Club at Cordillera, a private, full-service golf community. During her 12 years in Colorado Melissa served as a board member and Communications Director for the High Country Human Resource Association and a board member of the Colorado Rural Resort Workforce.

Born and raised in South Africa, Melissa received a BA in Industrial Psychology and Communication from the University of South Africa. She is a certified Senior Professional in Human Resource Management (SPHR).

Melissa displays her outgoing, enthusiastic personality in all her endeavors and enjoys activities that invole family and friends, such as mountain biking and snowboarding
